Last Sunday, I was really inspired after the workshop so I baked some bread.
And as I promised, here somes the recipe.
I've used some rye flour, as well as ordinary wheat flour.
It's not a white bread but it's not a brown bread either.
I also used seeds from flax and sunflower, which gives the bread a slightly nutty flavor.
50 g butter
0,5 cups milk
0,5 cups water
2 tbsp honey
30 g yeast
250 g cottage cheese
2 tbsp flax seeds
2 tbsp sunflower seeds
0,5 cups rye flour
3 cups flour
Melt the butter. Add the milkand water to the melted butter and heat to 45 C*.
Dissolve the yeast and honey in the liquid, in a large bowl. Add the rye flour, seeds and the cotted cheese. Finally add the flour, combine well but don't work it. The dough will be very sticky. Cover the bowl with a tea towel an let sit for about 30 minutes. After that, work the dough and devide in to two pieces. Make two round breads about 15 cm diameter, place on an oven tray, cover and let sit for 1 hour. Bake at 200 C* for 30-40 minutes.
The best thing about baking your own bread is the first slice.
